I’m an aspiring raw food chef living in Los Angeles. I believe in the power of whole foods to heal. Eating living foods heals not only ourselves but the planet.
I’ve been lacto-ovo vegetarian since 1996 (with a few years off in during post-graduate school.) I’m leaning more and more towards the vegan end of the vegetarian spectrum. I’ve been increasing the amount of raw food in my diet since 2005. I began chef training at the Living Light Culinary Institute in 2007. I’m not perfect. I’m no where near eating 100% raw. I still harbor a weakness for dairy products. I just feel better physically and emotionally when I avoid flesh foods. I’m learning to forgo the immediate pleasure of milk in return for better health,
I don’t believe anybody who says eating raw is easy. It can be simple to prepare and consume the food, but we live in a world which is not geared to the practice of healthy living. Even simple tasks take precious time. It takes practice to make good choices.
I feel a calling to help others integrate living foods into their diet. I’m not a guru. I struggle to nourish myself just like anybody else. I work full time in a demanding career. I have an active family life. I have friends and hobbies. I need to fit a living foods diet into this picture. I use this forum to share what works for me while I change my habits.
